Baked Egg Bites

1 cup egg whites

3 whole eggs

1 cup 0% cottage cheese

1/4 (24 grams) parmesan cheese, shredded

1 tbsp olive oil

1/4 onion

1 red pepper, chopped

2 cups spinach

1/2 tsp garlic powder

Salt and pepper to taste


  1. Preheat oven to 350F.

  2. Lightly grease a 12 cup muffin pan with non-stick spray.

  3. Combine the egg whites, whole eggs, cottage cheese, and parmesan in a bowl and whisk together well. Season with salt and pepper to your taste and set aside.

  4. Heat up the olive oil on low-medium heat in a skillet on the stove top.

  5. Add the onion and red pepper and cook until soft and the onion is translucent.

  6. Season the vegetables with salt, pepper, and garlic powder. Stir to combine.

  7. Add spinach and cook until gently wilted.

  8. Off the heat, add some of the vegetables to each of the 12 muffin cups evenly spitting up the mixture.

  9. Then, re-stir the egg mixture and distribute evenly over the vegetable mixture in each of the 12 cups using a spoon.

  10. Bake for about 30 minutes or until the tops of the egg bites are set and very slightly browned.

  11. Enjoy immediately or store in refrigerator for up to 4 days.
