Ingredients
½ cup of oats
1 medium sweet potato
2 eggs
½ cup skim milk
1 scoop of vanilla protein powder
1 tsp cinnamon
Pinch of salt
Preparation
Place oats in a blender and blend until almost a powder
Use a fork to pierce the sweet potato in several spots and then wrap the potato in damp paper towel
Cook the sweet potato in the microwave for about 5-6 minutes until soft
Run the cooked sweet potato under cold water and peel away the skin. Be careful, it’s hot!
Place the sweet potato, eggs, milk, protein powder, and cinnamon in the blender with the oats and blend until smooth. This is the pancake batter!
Use a small ladle or soup spoon to transfer batter to hot griddle or cast iron pan
Cook on both sides and then transfer to plate to keep warm while you cook the rest of the pancakes
